What other instruments to include in music project?

I’m looking to record some music in the vein of Nick Drake, Radiohead, Belle and Sebastian and Andrew Bird.

I’m undecided about whether I want to have a really stripped down sound or a fuller one with more instruments.

I’m pretty set on including conga, piano, cello and guitar. I know a little harmonica. What other instruments do you think would work well with this current mix? I think I’m trying to look for a good balance.

I’m looking into getting a melodica and mandolin. I’m also looking into some Indian instruments like harmonium, which I especially like in Beck’s Nobody’s Fault But My Own, and sitar. Problem is that the more instruments I learn, the less time I have to hone a single one. Piano’s my primary instrument, while I just started guitar 1/2 year ago. I also have to consider cost.

A decent harmonium will probably be expensive.

Probably the least expensive way to go would be with music/MIDI software, such as Cakewalk/Sonar. Not only can you record your current real-life instrument lineup with it, you can also compose/transpose a MIDI track with an endless supply of digitally-sampled virtual instruments and add it to your own tracks, and see how well it/they fit in. Sonar has just about every MIDI instrument you can think of, from as simple as a wood block to as complex as church pipe organ, and everything in between.
